2 oz (50 g) butter

8 oz (225 g) Cheshire or Cheddar  cheese ,grated salt and pepper

2 egges yolks if required

4 slices bread, lightly toasted

Melt the butter in a heavy saucepan, stir in rje cheese and season well. Stir over a gentle heat until the cheese melts. If the mixture shows signs of separating, bind together again with the eggs yolks.

Spread the toast with the mixture and brown under preheated grill for 3-4 minutes .Serve immediately . Serve 2 or 4.
