Orange Ice Cream. Recipe.
1 1/4 pt(750ml) water
15 0z (425g) granulated sugar
finely grated rind and juice of 1 large lemon
finely grated rind and juice of 8 large oranges
drop of red food colouring
Bring the water and sugar to the boil in a heavy saucepan, adding the grated lemon and orange rind as the syrup is heating up. Leave the syrup to boil for exactly 1 minute, then remove from the heat immediately and add the strained lemon and orange juice and food colouring. When the syrup is cold, strain, then set to freeze. After 1 hour, remove and beat thoroughly. Repeat until the mixture begins to harden into ice-cream , which will take 4-5 hours, unless using an ice-cream machine when it will only take 30-45 minutes.
